Description

These Airfryer Sweet Potato and Carrot Bites are the perfect healthy finger food for babies, combining naturally sweet mashed vegetables with a subtle hint of rosemary and garlic. Crispy on the outside and soft inside, they are easy to prepare and bake quickly in an air fryer, making snack time nutritious and hassle-free.

Ingredients

Scale

Vegetables

  • 180 g (3/4 cup) mashed sweet potato
  • 180 g (3/4 cup) mashed carrot

Other Ingredients

  • 1 tsp finely chopped rosemary
  • 1 tsp garlic granules
  • 1 egg
  • 3 tbsp Greek yogurt
  • 90 g (1/2 cup) oat flour, plus extra for dusting
  • 3 tbsp olive oil

Instructions

  1. Combine Ingredients: Add mashed sweet potato, mashed carrot, finely chopped rosemary, garlic granules, egg, Greek yogurt, oat flour, and olive oil to a large mixing bowl. Stir well until all ingredients are fully combined into a smooth mixture.
  2. Prepare for Cooking: Lightly dust a plate with extra oat flour to prevent sticking. Using a tablespoon, divide the mixture into small portions and place them onto the floured plate, shaping them gently as needed.
  3. Air Fry: Preheat the air fryer to 180ºC (356ºF). Place the formed bites into the air fryer basket and cook for 12 minutes or until they turn golden brown and are cooked through.
  4. Alternative Baking Method: For baking, place the bites on a baking tray lined with parchment paper. Bake in a preheated oven at 180ºC (356ºF) for 20-25 minutes, or until golden and cooked through.
  5. Serve: Once cooked, serve the bites warm with a sauce of your choice and a sprinkle of fresh parsley for added flavor and presentation.

Notes

  • You can store cooked bites in an airtight container in the refrigerator for up to 3 days.
  • Make sure bites are cool enough before serving to babies.
  • Oat flour can be substituted with gluten-free flour if needed for dietary restrictions.
  • These bites can be frozen after cooking and reheated in the air fryer for convenience.
  • Adjust seasoning according to your baby’s taste and dietary needs.
