- Mix Ingredients: Add all of the ingredients—mashed sweet potato, mashed carrot, finely chopped rosemary, egg, Greek yogurt, garlic granules, oat flour, and olive oil—into a large mixing bowl. Stir thoroughly until the mixture is fully combined and forms a consistent batter.
- Prepare for Shaping: Sprinkle a little extra oat flour on a plate to prevent sticking. Using a tablespoon, divide the mixture into bite-sized portions, shaping them gently as you go. The oat flour helps the bites hold their shape and prevents them from sticking to the plate.
- Air Fry Cooking: Place the shaped bites into the air fryer basket in a single layer, leaving some space between them. Cook at 180ºC (356ºF) for 12 minutes until they turn golden brown and are cooked through. Alternatively, you can bake them on a parchment-lined baking tray in a preheated oven at the same temperature for 20-25 minutes until golden.
- Serve: Once cooked, serve the sweet potato and carrot bites warm with a sauce of your choice. Garnish with a light sprinkle of fresh parsley for added flavor and visual appeal.
