Description

Baked Feta Potatoes are a simple yet flavorful side dish featuring tender, golden cubed potatoes seasoned with oregano and garlic, baked to perfection with a topping of creamy, slightly melted feta cheese. This easy recipe is perfect for a quick dinner accompaniment or a comforting snack.

Ingredients

Scale

Potatoes

  • 4 medium potatoes, peeled and cubed

Seasoning

  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • Salt and pepper, to taste

Toppings

  • 1/2 cup feta cheese, crumbled
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven: Preheat your oven to 400ยฐF (200ยฐC) to ensure it’s hot enough for roasting the potatoes evenly and achieving a crispy exterior.
  2. Prepare the potatoes: In a large bowl, toss the cubed peeled potatoes with olive oil, dried oregano, garlic powder, salt, and pepper until all pieces are evenly coated with the seasoning.
  3. Bake the potatoes: Spread the seasoned potatoes in a single layer on a baking sheet. Place in the preheated oven and bake for 25-30 minutes until the potatoes become golden brown on the outside and soft inside.
  4. Add feta cheese: Remove the baking sheet from the oven and evenly sprinkle the crumbled feta cheese over the hot potatoes. Return to the oven and bake for another 5-7 minutes, allowing the feta to soften and melt slightly without losing its texture.
  5. Garnish and serve: Once done, remove from the oven, garnish with freshly chopped parsley, and serve the potatoes immediately while warm for the best taste and texture.

Notes

  • For extra crispiness, use a baking sheet with a rack to allow air circulation beneath the potatoes.
  • You can substitute dried oregano with fresh herbs like rosemary or thyme for different flavor variations.
  • If you prefer a stronger garlic flavor, add minced fresh garlic along with the garlic powder.
  • These potatoes pair well with grilled meats, salads, or as a vegetarian main dish.
  • Ensure the potatoes are cut into evenly sized cubes to cook uniformly.
