Description

This Breakfast Stromboli is a delicious, savory pastry featuring soft scrambled eggs, crumbled breakfast sausage, and melted Colby Jack cheese rolled inside thin pizza dough. Baked to golden perfection, it’s an easy and satisfying way to start the day, perfect for feeding a crowd or meal prepping for busy mornings.

Ingredients

Scale

For the Dough and Filling

  • 1 (8-ounce) can thin crust refrigerated pizza dough
  • 1 pound pork breakfast sausage, cooked, crumbled, and well drained (turkey sausage can be substituted)
  • 8 large eggs, soft scrambled
  • 2 cups shredded Colby Jack cheese (cheddar cheese works as well)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.
  2. Prepare Dough Base: Open the can of refrigerated pizza dough and stretch it thin and even over the parchment paper, leaving space around the edges for rolling.
  3. Assemble Filling: Spread the soft scrambled eggs evenly over the dough, leaving a 3-inch border clear around the edges. Sprinkle the cooked and drained sausage evenly over the eggs, then top with most of the shredded cheese, reserving a few tablespoons for the top.
  4. Roll Stromboli: Starting from one side, carefully roll the dough over the filling into a jelly roll shape using the parchment paper to assist. Place the rolled stromboli seam side down in the center of the baking sheet, then stretch and tuck the ends underneath to seal. Cut several diagonal slits into the crust to allow steam to escape. Sprinkle remaining cheese on top.
  5. Bake: Place the stromboli in the oven and bake for 20 to 30 minutes, or until the crust turns golden brown and the cheese is melted and bubbly.
  6. Serve: Remove from oven and let cool slightly. Slice and serve warm on its own or with complementary sides such as sausage gravy, salsa, or marinara sauce for dipping.

Notes

  • You can substitute turkey sausage for pork sausage to reduce fat content.
  • Cheddar cheese can be used instead of Colby Jack if preferred.
  • Be sure to drain the cooked sausage well to avoid soggy dough.
  • Soft scrambled eggs ensure a creamy texture inside the stromboli.
  • The diagonal slits prevent the dough from puffing up excessively during baking.
  • Serve with various sauces like marinara or salsa to add extra flavor.
