Sauce Ingredients
- 1 ¼ cups chicken broth
- 3/4 cup milk, divided (2% recommended)
- 1/4 cup all purpose flour
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
Main Ingredients
- 5 cups cooked and chopped broccoli florets
- 1 cup plain Greek yogurt
- 1/2 small yellow onion, chopped
- 1 cup freshly grated mild cheddar cheese
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit. Prepare a 9×13 inch baking dish by spraying it with non-stick cooking spray and set it aside.
- Heat Broth and Milk: In a medium saucepan over medium-high heat, combine the chicken broth and 1/4 cup of milk. Bring the mixture to a low boil, then reduce heat to medium-low to maintain a gentle simmer.
- Prepare Flour Mixture: While the broth mixture is heating, whisk together the flour, onion powder, garlic powder, black pepper, and salt in a small bowl. Gradually pour in the remaining 1/2 cup milk, whisking continuously until smooth and free of lumps. The mixture will thicken considerably.
- Combine and Thicken Sauce: Slowly pour the flour and milk mixture into the simmering broth mixture, whisking constantly. Allow the combined mixture to simmer while stirring continuously until it becomes smooth and thick, about 5 minutes. Remove from heat and let it cool for about 10 minutes.
- Mix Casserole Ingredients: In a large bowl, combine the cooked broccoli, cooled cheese sauce, Greek yogurt, and chopped onion. Gently fold everything together until well mixed. Pour this mixture into the prepared baking dish and spread it evenly.
- Add Cheese Topping and Bake: Sprinkle the grated cheddar cheese evenly over the casserole. Bake in the preheated oven uncovered for 20 minutes, or until the casserole is hot, bubbly, and the cheese on top has melted. Once done, remove from the oven and serve warm.
Notes
- For a vegetarian version, substitute chicken broth with vegetable broth.
- Using Greek yogurt adds creaminess and a subtle tang while increasing protein content.
- Make sure broccoli is thoroughly cooked and drained to avoid excess moisture in the casserole.
- You can prepare the casserole in advance and refrigerate before baking, adding a few extra minutes to baking time if chilled.
- Adjust cheese variety or add parmesan for a different flavor profile.
