Description

A delicious and easy-to-make Cheddar Egg Quesadilla featuring fluffy scrambled eggs, sharp cheddar cheese, and warm flour tortillas cooked to golden perfection in a skillet. Ready in just 30 minutes, this savory quesadilla is perfect for breakfast, brunch, or a quick meal.

Ingredients

Scale

Main Ingredients

  • 4 large all-purpose flour tortillas (20-25 cm)
  • 8 large eggs
  • 30 ml milk or heavy cream
  • ½ teaspoon fine salt
  • ¼ teaspoon ground black pepper
  • 200 grams shredded sharp cheddar cheese
  • 30 grams unsalted butter

Instructions

  1. Prepare the Eggs: In a medium bowl, crack the eggs and add the milk, salt, and pepper. Whisk vigorously until fully combined and slightly frothy to incorporate air for fluffy scrambled eggs.
  2. Cook the Eggs: Heat 15 grams of butter in a large non-stick skillet over medium-low heat. Pour in the egg mixture and let it sit undisturbed until the edges begin to set. Gently fold the eggs from the edges to the center until approximately 80% cooked but still glossy. Remove from heat and transfer the scrambled eggs to a plate to prevent overcooking.
  3. Prepare the Skillet for Quesadilla: Wipe the skillet clean. Return it to medium-low heat and melt 7.5 grams of butter. Place one tortilla in the skillet and evenly sprinkle 50 grams of shredded cheddar cheese over the entire surface to ensure even melting.
  4. Assemble the Quesadilla: Spoon half of the scrambled eggs onto one half of the tortilla. Fold the empty half over the filling and press gently to seal the quesadilla ensuring the filling stays inside during cooking.
  5. Cook the Quesadilla: Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is fully melted. Flip carefully to avoid spilling the filling inside the quesadilla.
  6. Repeat and Serve: Remove the cooked quesadilla to a cutting board. Repeat the layering and cooking process with the remaining butter, tortillas, cheese, and eggs. Let the quesadillas rest for one minute before slicing them into wedges and serving warm for best taste.

Notes

  • For extra flavor, add chopped green chilies or fresh herbs to the scrambled eggs.
  • Use a spatula to gently press down the quesadilla while cooking to ensure even toasting and melting.
  • Adjust cooking time slightly based on the heat of your skillet to avoid burning the tortillas.
  • Serve with salsa, sour cream, or guacamole for added taste and texture.
  • Use gluten-free tortillas to make the recipe gluten-free if needed.
