Description

Cheddar Jalapeño Cornbread Waffles are a deliciously crispy and cheesy twist on traditional cornbread. Infused with the sharpness of cheddar cheese and a mild kick from fresh jalapeños, these waffles offer a perfect balance of flavors and textures. Perfect for breakfast, brunch, or a savory snack, these waffles deliver flavorful bliss with every bite.

Ingredients

Scale

Dry Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup melted butter

Add-ins

  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup diced fresh jalapeños (seeds removed for less heat)

Instructions

  1. Preheat the waffle iron. Follow your waffle iron manufacturer’s instructions to get it ready for cooking.
  2. Combine dry ingredients. In a large bowl, whisk together cornmeal, all-purpose flour, sugar, baking powder, and salt until evenly mixed.
  3. Mix wet ingredients. In a separate bowl, whisk the buttermilk, eggs, and melted butter until the mixture is smooth.
  4. Combine wet and dry ingredients. Pour the wet mixture into the dry ingredients and stir gently just until combined, ensuring you do not overmix to keep the batter light.
  5. Fold in cheese and jalapeños. Gently fold the shredded cheddar cheese and diced jalapeños into the batter to evenly distribute the flavors.
  6. Prepare waffle iron. Lightly grease the waffle iron with cooking spray or butter to prevent sticking.
  7. Cook the waffles. Pour about 1/2 cup of batter onto the preheated waffle iron for each waffle. Close the lid and cook for 5-7 minutes, or until waffles are golden brown and crispy.
  8. Check doneness and serve. Open the waffle iron once cooked to check that the waffles are firm and do not stick. Serve warm for best taste.

Notes

  • Remove jalapeño seeds to reduce the heat if desired.
  • Do not overmix the batter to keep the waffles tender and fluffy.
  • Use sharp cheddar cheese for a stronger cheesy flavor.
  • Lightly greasing the waffle iron ensures waffles release easily and develop a crispy crust.
  • Waffles can be kept warm in a low oven until all are cooked.
