Ingredients
Scale
Dry Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
Wet Ingredients
- 1 cup buttermilk
- 2 large eggs
- 1/4 cup melted butter
Add-ins
- 1 cup shredded sharp cheddar cheese
- 1/2 cup diced fresh jalapeños (seeds removed for less heat)
Instructions
- Preheat the waffle iron. Follow your waffle iron manufacturer’s instructions to get it ready for cooking.
- Combine dry ingredients. In a large bowl, whisk together cornmeal, all-purpose flour, sugar, baking powder, and salt until evenly mixed.
- Mix wet ingredients. In a separate bowl, whisk the buttermilk, eggs, and melted butter until the mixture is smooth.
- Combine wet and dry ingredients. Pour the wet mixture into the dry ingredients and stir gently just until combined, ensuring you do not overmix to keep the batter light.
- Fold in cheese and jalapeños. Gently fold the shredded cheddar cheese and diced jalapeños into the batter to evenly distribute the flavors.
- Prepare waffle iron. Lightly grease the waffle iron with cooking spray or butter to prevent sticking.
- Cook the waffles. Pour about 1/2 cup of batter onto the preheated waffle iron for each waffle. Close the lid and cook for 5-7 minutes, or until waffles are golden brown and crispy.
- Check doneness and serve. Open the waffle iron once cooked to check that the waffles are firm and do not stick. Serve warm for best taste.
Notes
- Remove jalapeño seeds to reduce the heat if desired.
- Do not overmix the batter to keep the waffles tender and fluffy.
- Use sharp cheddar cheese for a stronger cheesy flavor.
- Lightly greasing the waffle iron ensures waffles release easily and develop a crispy crust.
- Waffles can be kept warm in a low oven until all are cooked.
