Instructions
- Prepare the Mashed Potatoes: If using freshly made mashed potatoes, let them cool slightly. If using leftovers, ensure they are smooth and creamy. In a bowl, combine mashed potatoes, cheddar cheese, Parmesan cheese, sour cream, garlic powder, onion powder, salt, pepper, and egg. Mix thoroughly until well combined.
- Roll Out the Puff Pastry: On a lightly floured surface, roll out the thawed puff pastry to about 1/8-inch thickness. Use flour or parchment paper if the dough is sticky to help with rolling.
- Cut the Pastry: Using a 3-inch round cookie cutter, cup, or the rim of a glass, cut the puff pastry into circles, yielding about 12–16 pieces.
- Assemble the Bites: Place a heaping spoonful of mashed potato mixture in the center of each puff pastry circle. Fold the edges over the filling to form a pouch or half-moon shape, pinching edges firmly to seal.
- Brush with Olive Oil or Butter: Brush the tops of the filled pastries with olive oil or melted butter to promote a golden, crispy finish during baking.
- Bake: Arrange the puff bites on a parchment-lined baking sheet. Bake in a preheated oven at 375°F (190°C) for 18–20 minutes or until golden brown and puffed.
