- 1 tsp vanilla extract
- ¼ cup maple syrup
Dry Ingredients
- 2 cups quick cooking oats
- ¼ cup cocoa powder
- 1 tsp baking powder
- ½ tsp salt
- ½-1 tsp espresso powder (optional)
Add-ins
- ½ – ¾ cup chocolate chips
Instructions
- Preheat Oven: Set your oven to 350°F (175°C) to prepare for baking.
- Mix Wet Ingredients: In a large bowl, whisk the 2 large eggs until smooth. Add chocolate milk, melted butter, Greek yogurt, vanilla extract, and maple syrup, stirring thoroughly to combine.
- Add Dry Ingredients: To the wet mixture, add quick cooking oats, cocoa powder, baking powder, salt, and espresso powder if using. Stir well ensuring all ingredients are evenly incorporated.
- Incorporate Chocolate Chips: Gently fold in the chocolate chips until evenly distributed throughout the batter.
- Prepare Baking Pan and Pour Mixture: Grease an 8×8 inch baking pan and pour the oat batter evenly into it.
- Bake: Place the pan in the preheated oven and bake for 30-40 minutes, or until the edges and top are set and a toothpick inserted in the center comes out mostly clean with slight moist crumbs.
- Cool and Serve: Allow the baked oats to cool for about 10 minutes before slicing. Optionally, sprinkle with flaky sea salt or top with yogurt and fresh berries as desired.
Notes
- Using quick cooking oats helps achieve a softer, more cohesive texture.
- Espresso powder is optional but enhances the chocolate flavor for a richer taste.
- The baked oats will continue to firm up slightly after being removed from the oven, so a little moisture on the toothpick is okay.
- This recipe serves 9, making it great for meal prepping or feeding a family.
- Feel free to substitute chocolate milk with regular milk and add extra cocoa powder or sweetener to taste.
