Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C) to prepare for baking.
  2. Mix Wet Ingredients: In a large bowl, whisk the 2 large eggs until smooth. Add chocolate milk, melted butter, Greek yogurt, vanilla extract, and maple syrup, stirring thoroughly to combine.
  3. Add Dry Ingredients: To the wet mixture, add quick cooking oats, cocoa powder, baking powder, salt, and espresso powder if using. Stir well ensuring all ingredients are evenly incorporated.
  4. Incorporate Chocolate Chips: Gently fold in the chocolate chips until evenly distributed throughout the batter.
