  • 1 cup Heavy Cream, whipped to stiff peaks

Coffee Soak and Assembly

  • 2 cups Strong Brewed Coffee or Espresso, cooled
  • 2 tbsp Cocoa Powder, divided
  • Soft Ladyfingers (about 24 pieces)


Instructions

  1. Prepare the ganache: Heat 1 cup of heavy cream in a saucepan until it just begins to boil. Pour the hot cream over the chopped dark chocolate in a bowl. Let this mixture sit undisturbed for 5 minutes to melt the chocolate, then gently stir until the ganache is smooth and glossy. Set aside to cool slightly before using.
  2. Make the mascarpone cream: In a large bowl, whisk together the egg yolks, half of the granulated sugar (3/8 cup), and 3 tablespoons of rum until the mixture turns pale and fluffy. Beat in the mascarpone cheese until fully incorporated and smooth. In a separate chilled bowl, whip 1 cup of heavy cream to stiff peaks. Carefully fold the whipped cream into the mascarpone mixture until well combined and creamy.
  3. Create the coffee soak: In a shallow bowl, sift 1 tablespoon of cocoa powder. Stir in the remaining granulated sugar (3/8 cup) and the cooled brewed coffee or espresso until the sugar and cocoa powder dissolve completely, creating a smooth coffee soak.
  4. Assemble the tiramisu: Spread a thin, even layer of the prepared ganache in the bottom of an 8×8-inch dish. Quickly dip each ladyfinger into the coffee soak (do not soak too long to avoid sogginess) and arrange a layer covering the ganache. Spread one-third of the mascarpone cream evenly over the ladyfingers, then drizzle with more ganache. Repeat the layering process twice more, finishing with a smooth layer of mascarpone cream on top. Dust the entire dessert generously with the remaining cocoa powder.
