Cheeseball Base

Instructions

  1. Combine cheeses: In the bowl of a stand mixer, add the whipped cream cheese and freshly grated sharp white cheddar. Mix until fully combined and smooth.
  2. Add mix-ins: Add the chopped pecans, minced green onions or chives, liquid smoke, salt, and freshly cracked black pepper to the cheese mixture. Stir thoroughly to evenly incorporate all ingredients.
  3. Shape the cheeseball: Lay out a large piece of plastic wrap on the counter. Spoon the cheese mixture onto the center of the plastic wrap. Pull up the corners of the plastic wrap and wrap the cheese mixture tightly, shaping it into a smooth ball.
  4. Chill the cheeseball: Place the plastic-wrapped cheeseball in the refrigerator for at least 20 minutes to allow it to firm up and the flavors to meld.
  5. Unwrap: Remove the cheeseball from the refrigerator and carefully unwrap the plastic wrap.
  6. Decorate: Using your hands, gently press the pomegranate seeds onto the top and sides of the cheeseball, covering it completely. Repeat by pressing fresh curly parsley and additional chopped pecans onto the outside if desired, creating a festive and colorful coating.
