- 1/4 cup sprinkles (or crushed candy canes, M&M’s, etc.)
Instructions
- Preheat Oven: Preheat your oven to 350°F. Prepare a muffin tin by placing a cupcake or muffin liner in each cup to hold the cookies during baking.
- Arrange Crackers: Place one Ritz cracker in the bottom of each muffin cup, creating the base for the toffee layer.
- Make Toffee: In a medium saucepan over medium-low heat, combine 1 cup of butter and 1 cup of packed brown sugar. Stir occasionally and bring the mixture to a rolling boil. Continue cooking and stirring for 3 minutes until the toffee is bubbling and amber-colored.
- Pour Toffee: Remove the pot from heat. Carefully ladle about 2 teaspoons of the hot toffee mixture onto each cracker, spreading evenly to cover the surface.
- Bake Toffee: Place the muffin tin into the preheated oven and bake for 3 to 5 minutes until the toffee starts to bubble, indicating it’s set and caramelized.
- Add Chocolate: Remove the muffin tin from the oven. Immediately sprinkle 2 cups of semi-sweet chocolate chips evenly over the bubbling toffee. Let sit for 1 to 2 minutes to allow the chips to soften, then use a spatula to spread the melted chocolate smoothly over the toffee. If the chocolate is not melting well, return the tin to the oven for an additional 1 to 2 minutes before spreading.
- Decorate: Sprinkle 1/4 cup of your chosen toppings, such as sprinkles, crushed candy canes, or M&M’s, evenly over the melted chocolate layer.
- Cool and Serve: Allow the cookies to cool completely at room temperature or refrigerate for 30 minutes to 1 hour until firm. Once set, remove the cookies from the muffin tin liners. Serve and enjoy! Store leftovers in an airtight container at room temperature or refrigerated.
