Description

Creamy Boursin Mashed Potatoes are a rich and flavorful side dish made by cooking russet potatoes in chicken broth, then mashing them with creamy Boursin Garlic and Fine Herbs cheese, butter, and seasoning. This easy recipe delivers smooth, savory mashed potatoes with a subtle herb and garlic twist, perfect for complementing any meal.

Ingredients

Scale

Potatoes & Broth

  • 6 cups chicken broth (or water)
  • 3 pounds russet potatoes (cut into 1 inch cubes – skins on or off, your choice)

Dairy & Seasonings

  • ½ cup unsalted butter
  • 5.3 ounce Boursin Garlic and Fine Herbs Cheese
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Optional Garnish

  • 1 tablespoon chopped fresh chives

Instructions

  1. Boil Broth: Bring the chicken broth to a boil on the stove in a large stock pot. This will be the cooking liquid for the potatoes, infusing them with flavor.
  2. Cook Potatoes: Add the cubed potatoes to the boiling broth and cook for 15 minutes, or until they are fork tender. This ensures they are fully cooked and soft enough to mash.
  3. Reserve Broth: Remove ½ cup of the chicken broth from the pot and set it aside. This reserved broth will help adjust the mashed potatoes’ consistency.
  4. Drain and Combine: Drain the potatoes from the broth, then return them to the pot or transfer to a large mixing bowl. Add the reserved ½ cup chicken broth, butter, Boursin cheese, salt, and pepper.
  5. Mash Potatoes: Use a handheld potato masher or an electric hand mixer to mash the potatoes until creamy and well combined with the cheese and butter.
  6. Garnish and Serve: Transfer the mashed potatoes to a serving bowl and optionally garnish with chopped fresh chives for a pop of color and mild onion flavor.

Notes

  • You can cook the potatoes in water instead of chicken broth for a lighter taste.
  • Leave the potato skins on for a more rustic texture or peel them for a smoother mash.
  • Use an electric mixer for extra creamy mashed potatoes but avoid overmixing to prevent gummy texture.
  • Boursin Garlic and Fine Herbs cheese adds both creaminess and flavor, making additional seasonings optional.
  • Adjust salt and pepper to taste depending on your broth’s saltiness.
