Description

Creamy Cajun Corn on the Cob is a delightful Southern comfort dish featuring tender corn kernels smothered in a rich, cheesy, and spicy Cajun cream sauce. Perfect as a hearty side, this recipe combines fresh corn with a luscious blend of cream cheese, mozzarella, and Cajun spices, baked to bubbly perfection.

Ingredients

Scale

Corn and Toppings

  • 4 ears Corn on the Cob (fresh or thawed frozen)
  • to taste Salt
  • to taste Pepper
  • Fresh parsley (optional, for garnish)

Cream Sauce

  • 4 tablespoons Butter (or olive oil/plant-based butter)
  • 8 ounces Cream Cheese (or Greek yogurt/mascarpone)
  • 1 cup Heavy Cream (or half-and-half/whole milk)
  • 1 cup Mozzarella Cheese (or cheddar/pepper jack)
  • 2 tablespoons Cajun Seasoning (or Creole seasoning)
  • 1 teaspoon Garlic Powder (or fresh garlic)
  • 1 teaspoon Onion Powder (or fresh onions)

Instructions

  1. Preparation: Prepare all ingredients and preheat your oven to 350°F (175°C).
  2. Cook Corn: Boil or grill the ears of corn until they are tender, which should take about 8 to 10 minutes. For fresh corn, let cool slightly then carefully cut the kernels off the cob.
  3. Make Cream Sauce: In a medium saucepan over medium heat, melt the butter. Add cream cheese and heavy cream, whisking constantly until the mixture is smooth and creamy, about 2 to 3 minutes.
  4. Add Cheese and Seasoning: Stir in the mozzarella cheese and Cajun seasoning into the cream mixture. Continue stirring until the cheese melts fully and the sauce is well combined.
  5. Combine Corn and Sauce: Place the cut corn kernels into a baking dish. Pour the cheese sauce over the corn and gently mix to ensure every kernel is coated with the creamy sauce.
  6. Bake: Put the baking dish into the preheated oven and bake for 30 to 40 minutes until the casserole is bubbly and golden brown on top.
  7. Serve: Remove from oven, garnish with fresh parsley if desired, and serve directly from the baking dish for a warm, comforting side dish.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or whole milk and use Greek yogurt instead of cream cheese.
  • Adjust Cajun seasoning amount based on your preferred spice level.
  • Fresh garlic and onions can replace the garlic and onion powder for a more robust flavor.
  • You can use frozen corn if fresh is not available; just thaw and drain before using.
  • This dish pairs well with grilled meats, seafood, or as part of a Southern-inspired meal.
