Ingredients
Scale
Cheesecake Mixture
- 1 package (8 ounces) cream cheese, softened
- 1/3 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon cotton candy flavoring
- 1 cup whipped topping, thawed
Coating
- 1 cup crushed graham crackers
- 1 1/2 cups white chocolate melting wafers
- Pink and blue food coloring
- 1 cup crushed crispy rice cereal
Garnish
- Cotton candy pieces (optional)
Instructions
- Prepare Cheesecake Mixture: In a large bowl, beat the softened cream cheese until smooth. Add the powdered sugar, vanilla extract, and cotton candy flavoring, mixing until fully combined and creamy. Gently fold in the whipped topping until the mixture is light and fluffy.
- Chill and Shape Balls: Chill the cheesecake mixture for 20 to 30 minutes until firm enough to scoop. Using a tablespoon, scoop portions and roll each into smooth balls.
- Coat with Graham Crackers and Freeze: Roll each cheesecake ball lightly in crushed graham crackers. Place the coated balls on a parchment-lined baking sheet and freeze for 20 minutes to firm up.
- Melt and Color Chocolate: Melt the white chocolate melting wafers according to package instructions. Divide the melted chocolate into two bowls and tint one pink and the other blue using food coloring.
- Dip Cheesecake Balls in Chocolate: Dip each frozen cheesecake ball into the melted white chocolate, allowing excess chocolate to drip off. Immediately sprinkle with crushed crispy rice cereal for a crispy coating.
- Apply Color Swirl: Using a spoon, drizzle the alternate colored melted chocolate over the coated cheesecake balls to create a fun swirl effect.
- Set and Garnish: Let the dipped cheesecake bombs set at room temperature or refrigerate until firm. Just before serving, garnish with small pieces of cotton candy if desired.
Notes
- Add cotton candy garnish right before serving to prevent it from dissolving.
- Store cheesecake bombs in an airtight container in the refrigerator for up to 3 days.
- For extra crunch, mix the crispy rice cereal directly into the melted chocolate before dipping.
