Instructions

  1. Prepare Potatoes: Peel and cube the potatoes evenly. Place them in a pot of salted water and bring to a boil. Cook for about 15 minutes or until potatoes are fork-tender.
  2. Mash Potatoes: Drain the cooked potatoes thoroughly. Using a ricer, sieve, or masher, mash the potatoes until completely smooth and fluffy without lumps.
  3. Make the Dough: In a large mixing bowl, combine the mashed potatoes with 1 cup flour, 3 tablespoons melted butter, salt, and black pepper. Stir well until a soft, cohesive dough forms that’s easy to handle.
  4. Shape the Cakes: On a floured surface, flatten the potato dough into a disk about 1-inch thick. Cut the disk into 8 equal triangular pieces (farls).
  5. Fry the Potato Cakes: Heat the remaining 3 tablespoons butter in a skillet over medium heat. Place the potato cakes in the pan and fry for 4-5 minutes per side or until each side is golden brown and crispy. Adjust heat as necessary to avoid burning.
