Description

This Crock Pot Pork Chops with French Onion Gravy recipe features tender bone-in pork chops slow-cooked in a rich homemade French onion gravy. Caramelized onions and garlic are combined with beef broth, Worcestershire sauce, and fresh thyme to create a deeply flavorful sauce, perfect for a comforting and easy dinner that requires minimal hands-on time.

Ingredients

Scale

For the Pork Chops and Gravy

  • 2 tablespoons butter
  • 2 cups thinly sliced onions (approximately 1 large onion)
  • 4 cloves garlic, minced
  • 2 tablespoons French onion mix
  • 4 bone-in pork chops
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 3 sprigs fresh thyme
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Caramelize the Onions: Melt butter in a large skillet over medium-high heat. Add the thinly sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 10 minutes.
  2. Sauté the Garlic: Add the minced garlic to the skillet with the onions and sauté for an additional minute until fragrant. Transfer the onions and garlic mixture to the slow cooker.
  3. Prepare the Pork Chops: Rub the French onion mix evenly over the pork chops. Then, using the same skillet, sear the pork chops for 2 minutes on each side to develop a flavorful crust.
  4. Add Pork Chops to Slow Cooker: Transfer the seared pork chops to the slow cooker on top of the onion mixture.
  5. Add Liquids and Herbs: Pour the beef broth and Worcestershire sauce over the pork chops. Add the fresh thyme sprigs for aroma and flavor.
  6. Slow Cook: Cover and cook on high for 3-4 hours or on low for 7-8 hours until the pork chops are tender and cooked through.
  7. Remove Thyme and Pork Chops: Once cooked, remove the thyme sprigs and carefully take out the pork chops. Place them on a plate and tent with foil to keep warm.
  8. Thicken the Gravy: Set the slow cooker to high if not already. In a small bowl, mix the cornstarch and water to create a slurry. Stir this mixture into the slow cooker and cook, covered, for 5 more minutes until the gravy thickens.
  9. Serve: Either serve the pork chops immediately topped with the rich French onion gravy or return the pork chops to the slow cooker to keep warm in the gravy until ready to serve. Garnish with chopped fresh parsley if desired.

Notes

  • For extra flavor, use bone-in pork chops as they stay juicier during slow cooking.
  • Be careful not to overcook the pork chops; check them for tenderness starting at 3 hours on high or 7 hours on low.
  • You can substitute fresh thyme with dried thyme if fresh is unavailable; use about 1 teaspoon dried thyme.
  • Leftover gravy can be stored separately in the refrigerator for up to 3 days.
  • If you prefer a thicker gravy, you can increase the cornstarch to 3 tablespoons.
