Cookie Ingredients
- 1 cup unsalted butter (softened)
- 1 cup brown sugar (packed)
- 2 tbsp water
- 1 cup semisweet chocolate chips (or dark chocolate)
- 2 large eggs (at room temperature)
- 1 tsp vanilla extract
- 2 cups all-purpose flour (or gluten-free blend)
- 1 tsp baking soda
- 1/2 tsp salt (optional if using salted butter)
Mint Filling Ingredients
- 2 cups confectioners’ sugar
- 1/2 cup unsalted butter (softened)
- 2 tbsp 2% milk (or whole/plant-based milk)
- 1 tsp peppermint extract (adjust to taste)
- A few drops green food coloring (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the correct temperature for baking the cookies evenly.
- Melt Chocolate Mixture: In a saucepan over low heat, melt together the unsalted butter, brown sugar, water, and semisweet chocolate chips. Stir continuously until the mixture is smooth and fully melted. Allow it to cool slightly before moving to the next step.
- Mix Wet Ingredients: In a mixing bowl, whisk the eggs and vanilla extract. Gradually incorporate this mixture into the cooled chocolate blend, mixing thoroughly but gently.
- Prepare Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt (if using). This ensures even distribution of leavening and seasoning.
- Combine Wet and Dry: Slowly add the dry ingredients to the wet chocolate mixture, stirring just until combined to avoid overmixing which can make cookies tough.
- Shape Cookies: Use a rounded teaspoon to drop dough onto ungreased baking sheets, spacing each about 2 inches apart to allow spreading while baking.
- Bake Cookies: Bake the cookies in the preheated oven for 10-12 minutes, or until they are set but still soft in the center. Remove and cool on wire racks completely.
- Prepare Mint Filling: In a separate bowl, beat together the confectioners’ sugar, softened butter, milk, peppermint extract, and optional green food coloring until the filling is smooth and creamy.
- Assemble Sandwich Cookies: Spread a generous amount of the mint filling on the flat side of half the cooled cookies. Top with the remaining cookies to form sandwich cookies.
Notes
- Allow the chocolate mixture to cool before adding eggs to prevent cooking them prematurely.
- Spacing cookies adequately on the baking sheet prevents them from merging during baking.
- Adjust peppermint extract in the filling according to your taste preference for more or less mint flavor.
- Green food coloring is optional and only needed if you want a festive color for the filling.
- For gluten-free options, substitute the all-purpose flour with a gluten-free baking blend.
