Main Ingredients
- 8 large egg whites
- 1/4 cup cottage cheese
- 1/2 cup spinach, chopped
- 1/4 cup red bell pepper, finely diced
- 1/4 teaspoon garlic powder
- Salt, to taste
- Black pepper, to taste
- Nonstick cooking spray
Optional
- 1/4 cup shredded cheddar cheese (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and lightly spray a muffin tin with nonstick cooking spray to prevent sticking.
- Prepare Egg Mixture: In a blender or using a hand mixer, blend the egg whites, cottage cheese, garlic powder, salt, and pepper until the mixture is smooth and frothy for a light texture.
- Fill Muffin Cups: Pour the blended mixture evenly into the prepared muffin cups, filling each about two-thirds full to allow room for expansion during baking.
- Add Vegetables and Cheese: Sprinkle the chopped spinach, finely diced red bell pepper, and optional shredded cheddar cheese evenly over the top of each filled muffin cup.
- Bake Egg Bites: Place the muffin tin in the preheated oven and bake for 18-20 minutes until the egg bites are set and have a light golden color around the edges.
- Cool and Serve: Allow the egg bites to cool briefly in the tin before removing. Serve warm, or let cool completely and store in an airtight container for later use.
Notes
- You can substitute cottage cheese with ricotta or Greek yogurt for a slightly different texture.
- Feel free to add other veggies like mushrooms or tomatoes based on your preference.
- These egg white bites can be refrigerated for up to 4 days or frozen for up to 1 month.
- To reheat, microwave for about 30 seconds or bake at 300°F for 5 minutes until warmed through.
- Omitting cheddar cheese will make this recipe dairy-free except for the cottage cheese, or use a dairy-free alternative to keep it lactose-free.
