Description

Dijon Roasted Asparagus is a bright and savory side dish that transforms simple fresh asparagus into a flavorful and elegant accompaniment. Infused with tangy Dijon mustard, lemon juice, and optional garlic, this recipe is perfect for brunch spreads or served alongside grilled chicken or fish.

Ingredients

Scale

Asparagus

  • 1 lb fresh asparagus, trimmed

Dijon Mixture

  • 12 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice (optional, but recommended)
  • 12 cloves garlic, minced (optional)

Seasoning & Garnish

  • Salt and freshly ground black pepper, to taste
  • Optional: grated Parmesan or lemon zest for finishing

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare Dijon Mixture: In a small bowl, whisk together olive oil, Dijon mustard, lemon juice, and minced garlic (if using) until fully combined and smooth.
  3. Coat Asparagus: Toss the trimmed asparagus in the Dijon mixture until each spear is evenly coated in the flavorful dressing.
  4. Arrange on Baking Sheet: Spread the coated asparagus in a single layer on the prepared baking sheet, making sure not to overcrowd to allow even roasting.
  5. Roast Asparagus: Roast in the preheated oven for 12–15 minutes, or until the asparagus is tender and slightly caramelized around the edges. Note that thicker stalks may require an extra 2–3 minutes of roasting.
  6. Finish and Serve: Remove from oven and finish with a squeeze of fresh lemon, a sprinkle of grated Parmesan cheese, or some fresh cracked black pepper as desired. Serve warm as a flavorful side dish.

Notes

  • For crisp-tender asparagus, avoid overcrowding the baking sheet to ensure even roasting.
  • Thicker asparagus stalks may need 2 to 3 extra minutes in the oven for perfect tenderness.
  • To add a hint of sweetness, stir in 1 teaspoon of honey into the Dijon mixture before coating the asparagus.
