Description

A quick and flavorful Doritos Taco Salad featuring seasoned ground beef, fresh vegetables, black beans, shredded cheddar cheese, and crunchy nacho cheese Doritos, tossed with your choice of dressing for a perfect blend of textures and tastes.

Meat and Seasoning

  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning

Vegetables and Beans

  • 3 to 4 Romaine lettuce hearts, rinsed then chopped
  • 1 cup black beans, rinsed
  • 1 large tomato, chopped OR 1 cup sliced cherry tomatoes

Cheese and Chips

  • 1/2 cup shredded cheddar cheese
  • 1 ยฝ cups nacho cheese Doritos, broken into bite-size pieces

Dressing and Garnish

  • 1 cup Catalina dressing OR favorite salad dressing (ranch dressing is recommended as an alternative)
  • Fresh cilantro (optional)


Instructions

  1. Cook the Ground Beef: Brown and crumble the lean ground beef in a large skillet over medium-high heat until fully cooked. Drain excess grease. Add the taco seasoning packet along with the amount of water specified on the seasoning packet. Stir the mixture and bring it to a boil. Then reduce heat to low and let it simmer for 10 minutes. Once done, remove from heat and allow the meat to cool slightly.
  2. Assemble the Salad Base: In a large salad bowl, combine the chopped Romaine lettuce, rinsed black beans, chopped or sliced tomatoes, and shredded cheddar cheese. Add the slightly cooled taco-seasoned ground beef and gently toss all ingredients together to combine evenly. You can serve immediately or chill in the refrigerator until ready to eat. Avoid adding the Doritos chips at this stage to keep them crunchy.
  3. Add Doritos and Dressing: Just before serving, add the broken nacho cheese Doritos chips and your choice of dressing (Catalina or ranch) to the salad. Toss the salad gently to coat all ingredients with the dressing and mix in the chips for crunch. Optionally, garnish with fresh cilantro for added flavor. Serve immediately.

  • Do not add the Doritos chips until just before serving to maintain their crunchiness.
