Ingredients
Scale
Filling
- 2 cups cooked, shredded chicken (rotisserie works great)
- 1 packet taco seasoning (or 2 tbsp homemade)
- ½ cup salsa
- 1 cup shredded Mexican blend or cheddar cheese
Tortillas & Preparation
- 8–10 small flour or corn tortillas
- 1 tbsp olive oil (for brushing)
Optional Toppings
- Sour cream
- Guacamole
- Shredded lettuce
- Diced tomatoes
- Jalapeños
- Fresh cilantro
Instructions
- Preheat Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper to prepare for baking the tacos.
- Prepare Filling: In a mixing bowl, combine the shredded chicken, taco seasoning, and salsa until all ingredients are evenly mixed to create a flavorful filling.
- Warm Tortillas: Warm the tortillas by microwaving them for 20–30 seconds wrapped in a damp paper towel to make them pliable and prevent cracking during folding.
- Assemble Tacos: Spoon the chicken mixture onto half of each tortilla, then sprinkle shredded cheese over the filling. Fold the tortilla over to enclose the filling and place each taco on the prepared baking sheet.
- Brush with Olive Oil: Lightly brush both sides of each folded taco with olive oil to help achieve a crispy texture when baked.
- Bake: Place the baking sheet in the preheated oven and bake the tacos for 12–15 minutes, or until the tortillas are golden and crispy and the cheese has melted completely.
- Serve: Remove from the oven and serve hot topped with your favorite optional toppings such as sour cream, guacamole, shredded lettuce, diced tomatoes, jalapeños, or fresh cilantro.
Notes
- For creamier tacos, add a spoonful of cream cheese to the chicken filling before assembling.
- Incorporate black beans or corn into the filling for added texture and nutrition.
- Using store-bought rotisserie chicken greatly speeds up preparation without sacrificing flavor.
- Warm tortillas carefully to prevent tearing or cracking when folding.
- Brush with olive oil to ensure a crispier baked taco shell.
