Ingredients
Scale
Dough:
- 2 cups Self-Rising Flour (can substitute with all-purpose flour plus baking powder)
- 1 cup Plain Greek Yogurt (regular or fat-free yogurt can be used)
Filling:
- 1/2 cup Brown Sugar (coconut sugar or stevia blend can be used)
- 1 tbsp Cinnamon (adjust to taste)
- 1/4 cup Melted Butter (coconut oil can be used for dairy-free option)
Icing:
- 1 cup Confectioners’ Sugar (powdered erythritol for keto-friendly option)
- 2 tbsp Milk (almond milk or any non-dairy milk can be used)
Decoration:
- Food Coloring (optional, natural food coloring recommended or omit)
- 1 cup Sugar or Stevia (any granulated sweetener, adjust sweetness level)
Instructions
- Make the Dough: In a mixing bowl, blend the self-rising flour and Greek yogurt until a soft dough forms. Transfer to a floured surface and knead gently for about 1-2 minutes to bring the dough together and make it smooth.
- Roll Out the Dough: Using a rolling pin, flatten the dough evenly on a floured surface to approximately ½-inch thickness to prepare for rolling.
- Prepare the Filling: Brush the flattened dough with melted butter, then evenly sprinkle a mixture of cinnamon and brown sugar across the surface for a sweet, spiced flavor.
- Form the Rolls: Carefully roll the dough into a log shape, starting from one edge, and then cut the log into 12 equal pieces to form the individual cinnamon rolls.
- Arrange Rolls for Baking: Place the cinnamon rolls cut side up in a greased 8 x 8-inch baking dish, ensuring they have room to expand while baking.
- Bake the Rolls: Preheat your oven to between 365°F and 375°F. Bake the rolls for about 25 minutes until they are golden brown and cooked through.
- Make the Icing: While the rolls bake, mix the confectioners’ sugar with milk until smooth to create a creamy icing.
- Finish and Serve: After baking, drizzle the icing over the warm cinnamon rolls and sprinkle with colorful homemade sprinkles or food coloring to add a festive Mardi Gras touch before serving.
Notes
- You can substitute self-rising flour with all-purpose flour plus 1½ teaspoons baking powder per 2 cups flour.
- Use regular or fat-free Greek yogurt as preferred; non-dairy yogurt may alter texture.
- For a dairy-free option, replace melted butter with coconut oil and use non-dairy milk in the icing.
- Adjust cinnamon and sugar amounts based on your sweetness preference.
- Use natural food coloring or omit for a more traditional look.
- Ensure rolls are arranged cut side up for even baking and optimal swirl appearance.
- Cool slightly before icing to prevent it from melting off completely.
