Ingredients
Scale
Cobbler Batter
- 1/4 cup butter
- 1/2 cup flour
- 2/3 cup sugar (divided)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/3 cup milk
- 1 egg
- 1/4 teaspoon vanilla extract
Peach Filling
- 2 cups peeled peaches (if frozen, thaw and drain juice)
- 1/3 cup sugar
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup brown sugar
Optional
- Ice cream for serving
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cobbler.
- Melt Butter: Place 1/4 cup butter in a 9-inch glass baking dish and put it inside the oven to melt while you prepare the batter.
- Prepare Batter: In a large mixing bowl, whisk together 1/2 cup flour, 2/3 cup sugar, 1 teaspoon baking powder, and 1/4 teaspoon salt. Add 1/3 cup milk, 1 egg, and 1/4 teaspoon vanilla extract, stirring gently until combined to form a smooth batter.
- Pour Batter Over Butter: Once the butter is melted, carefully remove the baking dish from the oven and pour the batter evenly over the melted butter. Do not stir.
- Mix Peach Filling: In a separate bowl, combine 2 cups peeled peaches, 1/3 cup sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon nutmeg. Mix gently to evenly coat the peaches with the spices and sugar.
- Add Peach Filling: Spoon the peach mixture evenly over the batter in the baking dish. Do not stir to keep the layers distinct.
- Sprinkle Brown Sugar: Evenly sprinkle 1/4 cup brown sugar on top of the peach layer to add sweetness and encourage caramelization during baking.
- Bake: Place the dish in the oven and bake for 40 to 45 minutes until the cobbler is golden brown and bubbly around the edges.
- Broil for Crispness (Optional): For an extra crispy top, place the cobbler under the broiler for 1 to 2 minutes, watching carefully to avoid burning.
- Serve: Remove from oven and let it cool slightly before serving warm. Optionally serve with a scoop of ice cream for added creaminess.
Notes
- Use fresh or thawed frozen peaches, ensuring excess juice is drained to avoid a soggy cobbler.
- Do not stir the batter after pouring it over the melted butter; the peaches will naturally sink and the batter will rise during baking to create the layered cobbler effect.
- Adjust baking time based on your oven; look for a golden brown top and bubbling edges as signs of doneness.
- Broiling is optional but adds a lovely crisp texture to the top layer.
- For a dairy-free version, substitute butter with a vegan butter alternative and milk with almond or oat milk.
