Instructions
- Prepare Oven and Pan: Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or line it with silicone molds to prevent sticking.
- Blend Egg Mixture: In a blender, combine the eggs, plain Greek yogurt, and cottage cheese. Blend until the mixture is smooth and frothy, ensuring a creamy texture for the egg bites.
- Mix Add-ins: Pour the blended egg mixture into a large mixing bowl. Stir in shredded cheddar cheese, chopped spinach, diced bell pepper, salt, and black pepper until everything is evenly combined.
