Cloud Bread Ingredients
- 3 large eggs, separated
- 3 tablespoons whole milk cottage cheese or cream cheese
- 1/4 teaspoon cream of tartar
- 1 (1 g) packet artificial sweetener (optional)
Instructions
- Preheat the Oven: Begin by preheating your oven to 300°F (150°C). Line a baking sheet with parchment paper to prevent sticking.
- Separate the Eggs: Carefully separate the egg whites from the yolks, placing the whites in one large mixing bowl and the yolks in another.
- Mix Egg Yolks and Cheese: In the bowl with the yolks, add the cottage cheese (or cream cheese) and optional artificial sweetener. Whisk vigorously until the mixture is smooth and well combined.
- Beat Egg Whites: Add the cream of tartar to the egg whites to stabilize them. Using an electric mixer, beat the whites on high speed until stiff peaks form, which means the whites should hold their shape firmly when the beaters are lifted.
- Combine Mixtures: Gently fold the egg yolk mixture into the beaten egg whites using a spatula. Careful folding is important to retain the airiness so the bread stays fluffy.
- Spoon onto Baking Sheet: Using a spoon or ice cream scoop, dollop the batter onto the parchment-lined baking sheet into 6 equal mounds. Flatten each slightly to form a round bread shape.
- Bake: Place the baking sheet in the preheated oven and bake for 25 to 30 minutes or until the cloud breads are golden brown and set to the touch.
- Cool and Serve: Remove the breads from the oven and let them cool completely on a wire rack before serving or using for sandwiches.
Notes
- Substitute cream cheese for cottage cheese if you prefer a creamier texture.
- The optional artificial sweetener can be omitted if you desire a neutral bread flavor.
- Be sure to fold the mixtures gently to keep the bread light and fluffy.
- This recipe is best consumed the same day but can be stored in an airtight container for up to 2 days.
- Reheat briefly in a toaster or oven to restore fluffiness before serving.
