Instructions

  1. Prepare the egg whites: Separate the egg whites from the yolks carefully, ensuring no yolk gets into the whites. Place the egg whites in a clean, dry bowl and add the cream of tartar. Using an electric mixer, beat the whites on high speed until stiff peaks form, which ensures the bread’s fluffy texture.
  2. Mix the yolks and cheese: In a separate bowl, combine the egg yolks with the whole milk cottage cheese or cream cheese, and the artificial sweetener if using. Whisk together until the mixture is smooth and creamy.
  3. Fold yolk mixture into whites: Gently fold the yolk and cheese mixture into the beaten egg whites. Use a spatula with careful, slow folding motions to preserve the airiness of the whites and avoid deflating the mixture.
