Instructions
- Prepare fresh corn: Bring a pot of salted water to a boil. Add corn kernels and cook for 2 minutes. Drain and rinse under cold water to stop the cooking process. Skip this step if using pre-cooked corn.
- Combine salad components: In a large bowl, combine the cooked corn, cherry tomatoes, diced avocado, finely diced red onion, and chopped cilantro.
- Prepare dressing: In a small bowl, whisk together the extra-virgin olive oil, fresh lime juice, honey or maple syrup, sea salt, and freshly ground black pepper until well combined.
