- 2 cups plain Greek yogurt
- 1 cup creamy peanut butter
- 1/4 cup honey or maple syrup (optional)
- 1 teaspoon vanilla extract
- A pinch of salt
Optional Mix-ins
- 1/2 cup mini chocolate chips or chopped nuts
Instructions
- Combine Ingredients: In a mixing bowl, mix together the Greek yogurt, peanut butter, honey or maple syrup (if using), vanilla extract, and salt until the mixture is smooth and fully combined.
- Add Mix-ins: Gently fold in mini chocolate chips or chopped nuts if you desire added texture and flavor.
- Prepare Molds: Line a muffin tin with paper liners or use silicone molds to allow for easy removal once frozen.
- Fill Molds: Spoon the mixture into the prepared molds, filling each cavity about three-quarters full to allow space for freezing expansion.
- Smooth Tops: Use the back of a spoon or a spatula to level and smooth the tops of each filled cavity.
- Freeze: Place the muffin tin or molds into the freezer and allow the bites to freeze for at least 2 to 3 hours, or until completely solid.
- Serve and Store: Remove the frozen bites from the molds and enjoy immediately, or store them in an airtight container in the freezer for later snacking.
Notes
- For a dairy-free option, substitute Greek yogurt with a plant-based yogurt.
- Adjust sweetness by varying the amount of honey or maple syrup, or omit entirely for a tangier bite.
- Mix-ins can be customized with dried fruit, seeds, or other nuts according to preference.
- Store leftovers in the freezer for up to 2 weeks to maintain freshness.
- Allow to thaw a few minutes at room temperature before eating for a softer texture if desired.
