Ingredients
Scale
Vegetables
- 2 medium zucchinis, sliced into ยฝ-inch rounds
Garlic Butter Sauce
- 4 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 1 teaspoon dried oregano (or Italian seasoning)
- Salt and pepper, to taste
Other
- Skewers (wooden or metal)
Instructions
- Preheat Grill: Preheat your grill to medium heat to ensure even cooking and nice grill marks on the zucchini skewers.
- Prepare Garlic Butter Mixture: In a small bowl, combine the melted unsalted butter with minced garlic, dried oregano, salt, and pepper. Stir well to blend all the flavors.
- Thread Zucchini onto Skewers: Carefully thread the zucchini slices onto the skewers, leaving a little space between each piece for even cooking.
- Apply Garlic Butter: Generously brush the garlic butter mixture over the threaded zucchini slices to coat them evenly.
- Grill the Skewers: Place the skewers on the preheated grill. Cook for about 8-10 minutes, turning occasionally, until the zucchini is tender and has appealing char marks.
Notes
- Soak wooden skewers in water for 30 minutes before threading to prevent burning on the grill.
- For added flavor, sprinkle some grated Parmesan cheese on the skewers after grilling.
- These skewers can also be cooked using a grill pan on the stovetop if an outdoor grill is unavailable.
- Adjust seasoning to taste; you can add chili flakes for a spicy kick.
