- 3/4 cup mayonnaise

- 1 cup crushed salted crackers (such as saltines)
Instructions
- Hard boil the eggs: Place the eggs in a saucepan and cover with cold water. Bring to a gentle boil, then cover the pan, turn off the heat, and let the eggs sit for 10–12 minutes. Transfer them to an ice bath to cool completely, then peel and chop.
- Prepare the vegetables and herbs: Halve the cherry tomatoes, finely dice the red onion, and chop the fresh dill and parsley if using.
- Make the dressing: In a large mixing bowl, whisk together the mayonnaise, Dijon mustard, garlic powder, kosher salt, and black pepper until the mixture is smooth and creamy.
- Combine salad ingredients: Add the chopped eggs, cherry tomatoes, red onion, dill, and parsley to the bowl with the dressing. Gently fold everything together until evenly coated.
- Chill the salad (optional): If time allows, refrigerate the egg and tomato mixture for 20–30 minutes to allow the flavors to meld and the dressing to thicken slightly.
- Add the crackers: Just before serving, crush the salted crackers into bite-size pieces and gently fold them into the salad to maintain their crunch.
- Adjust seasoning and serve: Taste the salad and add extra salt or pepper if needed. Garnish with additional dill and serve immediately for the best texture and flavor.
