For the Dough:

  • 2 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 tsp active dry yeast
  • 1/2 tsp salt
  • 1/2 cup warm milk (110°F)
  • 1/4 cup warm water
  • 1/4 cup unsalted butter, melted
  • 1 large egg

For the Filling:

  • 1/2 cup graham cracker crumbs
  • 1/2 cup mini marshmallows (or regular marshmallows cut into small pieces)
  • 1/2 cup milk chocolate chips (or broken-up chocolate bars)
  • 2 tbsp unsalted butter, melted (for brushing)

For the Glaze (Optional):

  • 1/2 cup powdered sugar
  • 1 tbsp milk
  • 1/2 tsp vanilla extract


Instructions

  1. Make the Dough: In a large bowl, combine the warm milk, warm water, and granulated sugar. Sprinkle the active dry yeast over the mixture and let it sit undisturbed for 5 minutes until it becomes foamy, indicating the yeast is active. Then add the melted butter, beaten egg, and salt, stirring to combine. Gradually add the all-purpose flour, stirring continuously until a soft dough forms.
  2. Knead the Dough: Turn the dough onto a lightly floured surface and knead it for 5 to 7 minutes until it is smooth and elastic. Form the dough into a ball and place it into a lightly oiled bowl. Cover the bowl with a clean towel and let the dough rise in a warm place for about 1 hour or until it doubles in size.
  3. Prepare the Filling: Once the dough has risen, punch it down gently to release air. Roll the dough out into a rectangle roughly 12×8 inches in size. Brush the surface with melted butter, then evenly sprinkle graham cracker crumbs over the dough. Add mini marshmallows and milk chocolate chips evenly on top of the graham cracker layer.
  4. Roll & Slice: Starting from one of the longer edges, carefully roll the dough into a tight log. Using a sharp knife, cut the log into 12 even slices, forming individual rolls.
  5. Bake the Rolls: Preheat the oven to 350°F (175°C). Arrange the rolls side by side in a greased 9×13-inch baking dish. Cover the dish and let the rolls rise again for 30 minutes or until slightly puffed. Bake in the preheated oven for 25 to 30 minutes, or until the rolls are golden brown and the marshmallows inside are melted and gooey.
  6. Glaze (Optional): While the rolls are baking, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract in a small bowl until smooth. Once the rolls come out of the oven and have cooled for a few minutes, drizzle the glaze evenly over the top for an extra touch of sweetness.
