  • 1 tablespoon lime juice
  • 1 tablespoon sriracha

Instructions

  1. Preheat Grill: Preheat a grill to medium-high heat, approximately 400°F, ensuring it is well heated for even cooking.
  2. Season the Chicken: Rub the chicken thighs with olive oil to help the seasoning stick and keep the meat moist. Sprinkle the Thai seasoning evenly over all sides of the chicken thighs to infuse authentic flavor.
  3. Prepare the Glaze: In a small bowl, whisk together the sweet chili sauce, soy sauce, lime juice, sriracha, and chopped fresh cilantro until well combined. Set aside this flavorful glaze to use during and after grilling.
  4. Grill the Chicken: Place the seasoned chicken thighs on the grill and cook for 5-6 minutes on one side, then flip and grill for another 5-6 minutes on the other side.
  5. Apply Glaze: During the last 2 minutes of grilling, generously brush half of the prepared glaze over the chicken thighs to create a sticky, flavorful coating.
  6. Check for Doneness and Rest: Remove the chicken from the grill once the internal temperature reaches 160°F. The temperature will continue to rise about 5 degrees as the chicken rests. Brush the remaining glaze over the chicken while it rests for 5 minutes on a cutting board, allowing juices to redistribute.
