  • 10 large eggs

  • 2 tablespoons olive oil, divided

Instructions

  1. Preheat and prepare dish: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish thoroughly to ensure the egg bake doesn’t stick.
  2. Cook the sausage: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the Italian sausage and cook it, breaking it up with a spoon, until browned and fully cooked, approximately 6 to 8 minutes. Once cooked, transfer the sausage to a plate and set aside.
  3. Sauté mushrooms and spinach: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced mushrooms and cook for about 5 minutes, stirring occasionally, until the mushrooms are browned. Then add the fresh spinach and sauté until wilted, about 2 minutes. Remove from heat once done.
  4. Mix eggs and seasoning: In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until the mixture is smooth and uniform.
  5. Combine all ingredients: Add the cooked sausage, sautéed mushrooms and spinach, and shredded mozzarella cheese into the egg mixture. Stir well to combine all ingredients evenly.
