Ingredients
Scale
Wet Ingredients
- 3 ripe bananas, mashed
- 2 large eggs
- 1/4 cup melted coconut oil or butter
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
Dry Ingredients
- 1 1/2 cups Kodiak Cakes Power Cakes Flapjack & Waffle Mix
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
Optional Add-ins
- 1/2 cup chopped walnuts or chocolate chips
Instructions
- Preheat and prepare pan: Preheat your oven to 350°F. Grease a 9×5-inch loaf pan or line it with parchment paper to ensure easy removal of the bread once baked.
- Mash bananas and combine wet ingredients: In a large bowl, mash the ripe bananas until smooth. Stir in the eggs, melted coconut oil or butter, honey or maple syrup, and vanilla extract until everything is thoroughly combined.
- Mix dry ingredients: In a separate bowl, whisk together the Kodiak Cakes Power Cakes Mix, baking soda, salt, and cinnamon to evenly distribute the leavening agents and spices.
- Combine wet and dry mixtures: Gradually add the dry ingredients into the wet banana mixture, stirring gently until just combined to avoid overmixing, which can make the bread tough.
- Fold in optional add-ins: If using, gently fold in chopped walnuts or chocolate chips to incorporate them evenly throughout the batter.
- Pour batter and bake: Pour the batter into the prepared loaf pan and smooth the top with a spatula for even baking. Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool before slicing: Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely to prevent crumbling when sliced.
Notes
- Kodiak Cakes mix increases the protein content compared to traditional banana bread recipes.
- Using overripe bananas ensures maximum sweetness and moisture for a tender crumb.
- For a flavorful finish, sprinkle cinnamon sugar on top of the batter before baking.
