Scale
Dry Ingredients
- 2 cups All-purpose flour
- ½ tsp Baking powder
- ¼ tsp Salt
Wet Ingredients & Flavorings
- ¾ cup Softened butter
- ¾ cup Granulated sugar
- 1 Egg
- 1 tbsp Lemon zest
- 1 tbsp Lemon juice
- 2 tbsp Finely chopped fresh basil
- 1 tsp Vanilla extract
Optional Lemon Glaze
- 1 cup Powdered sugar
- 1–2 tbsp Lemon juice
Instructions
- Preheat oven: Heat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
- Mix dry ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt to evenly distribute the leavening agents and seasoning.
- Cream butter and sugar: In a separate large bowl, beat the softened butter and granulated sugar together until light and fluffy, creating a smooth base for the cookie dough.
- Add flavorings: Incorporate the egg, lemon zest, lemon juice, finely chopped fresh basil, and vanilla extract into the creamed butter and sugar mixture, blending well to infuse the dough with bright citrus and fresh herbal flavors.
- Combine mixtures: Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms, ensuring everything is well combined without overmixing.
- Shape cookies: Roll the dough into small balls about 1 inch in diameter and place them on the prepared baking sheet, spacing them evenly. Lightly flatten each ball to create a round cookie shape.
- Bake: Place the baking sheet in the preheated oven and bake the cookies for 10 to 12 minutes, or until the edges begin to turn a light golden color.
- Cool and serve: Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Serve as is or proceed with optional glaze.
- Optional Lemon Glaze: For extra citrus flavor, mix powdered sugar with 1 to 2 tablespoons of lemon juice until smooth and drizzle over cooled cookies.
Notes
- For a stronger basil flavor, gently crush the fresh basil leaves with a little sugar before adding to the dough.
- Make sure the butter is softened, not melted, for better creaming with the sugar.
- Chilling the dough for 30 minutes before rolling can help cookies keep their shape during baking.
- Use fresh lemon zest and juice for the best vibrant lemon flavor.
- Store cookies in an airtight container at room temperature for up to 5 days.
- The optional lemon glaze adds a tangy sweetness but can be omitted for a simpler cookie.
