Description

Libby’s Classic Pumpkin Pie is a delicious and easy-to-make dessert featuring a smooth pumpkin pie mix combined with evaporated milk and eggs, baked to perfection in a flaky deep dish pie crust. This simple recipe requires only five ingredients and results in a creamy, flavorful pumpkin pie ideal for fall celebrations and holiday gatherings.

Ingredients

Scale

Pie Filling

  • 1 can (15 ounces) Libby’s 100% Pure Pumpkin Pie Mix
  • 5 ounces evaporated milk
  • 2 large eggs

Pie Crust

  • 1 unbaked 9-inch deep dish pie shell

Topping (optional)

  • Cool Whip or whipped topping, for serving

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for baking the pumpkin pie.
  2. Make the Filling: In a medium bowl, combine the entire can of pumpkin pie mix with 5 ounces of evaporated milk and 2 large eggs. Stir gently until the mixture is smooth and well blended.
  3. Prepare the Pie Shell: Place the unbaked 9-inch deep dish pie shell on a baking sheet to catch any drips and make handling easier.
  4. Fill the Pie Shell: Pour the prepared pumpkin filling into the unbaked pie shell, spreading it evenly with a spatula to the edges.
  5. Bake the Pie: Bake in the preheated oven for 15 minutes at 425°F. Then, reduce the oven temperature to 350°F (175°C) and continue baking for 40-50 minutes more, or until a knife inserted near the center comes out clean.
  6. Cool the Pie: Remove the pie from the oven and cool on a wire rack. Let the pie cool completely to room temperature, then refrigerate for at least 2 hours before serving to allow it to set properly.
  7. Serve: Serve each slice topped with a dollop of Cool Whip or your favorite whipped topping for extra creaminess and sweetness.

Notes

  • For best results, use the exact size of the pumpkin pie mix can specified in the recipe.
  • Make sure to reduce oven temperature after the first 15 minutes of baking to avoid overcooking the crust.
  • Cooling the pie completely before slicing helps it hold its shape better.
  • Use a deep dish pie crust to ensure the filling fits well and bakes evenly.
  • Storing the pie in the refrigerator after baking keeps it fresh and enhances the texture.
