Ingredients
Scale
Rolls
- 1 large cucumber
- 1 ripe avocado
- 1 small carrot, julienned (optional)
- 1/4 red bell pepper, julienned (optional)
- 2 teaspoons toasted sesame seeds
- 1 tablespoon fresh cilantro or chives, finely chopped
- 1 sheet nori, cut into thin strips (optional)
Dipping Sauce
- 2 tablespoons soy sauce or tamari (gluten-free)
- 1 teaspoon rice vinegar
- 1/2 teaspoon sesame oil
- 1/2 teaspoon maple syrup or honey
- Pinch chili flakes (optional)
Instructions
- Prepare Cucumber Strips: Wash and dry the cucumber thoroughly. Using a vegetable peeler or mandoline, slice the cucumber lengthwise into very thin strips. Pat dry with paper towels to remove excess moisture to ensure the rolls don’t become soggy.
- Slice Avocado: Slice the avocado in half, remove the pit, and cut the flesh into thin, even strips for easy rolling and even distribution in the rolls.
- Assemble Rolls: Lay one cucumber strip flat on a clean surface. Place a few strips of avocado, carrot, and red bell pepper at one end of the strip. Sprinkle with a pinch of toasted sesame seeds and freshly chopped cilantro or chives for fresh flavor.
- Roll Filling: Carefully roll the cucumber strip around the filling to form a tight roll. If necessary, secure each roll with a thin strip of nori or a toothpick to hold the shape.
- Complete Rolls: Repeat the assembly process with the remaining cucumber strips and filling ingredients until you have approximately 8 rolls ready to serve.
- Prepare Dipping Sauce: In a small bowl, combine soy sauce (or tamari), rice vinegar, sesame oil, maple syrup (or honey), and optional chili flakes. Stir well until all ingredients are fully incorporated to create a balanced dipping sauce.
- Serve: Arrange the cucumber avocado sesame rolls on a serving plate and serve immediately with the dipping sauce for a fresh and light appetizer or snack.
Notes
- For a gluten-free version, use tamari instead of soy sauce.
- Optional vegetables like carrot and red bell pepper add color and crunch but can be omitted for simplicity.
- The rolls are best served fresh to maintain cucumber crispness.
- You can substitute fresh herbs with basil or mint for a different flavor profile.
- Adjust sweetness in the dipping sauce by varying the amount of maple syrup or honey.
