Ingredients
Scale
Base Ingredients
- 1 can Coconut milk (Full-fat recommended)
- 1/4 cup Cornstarch (For thickening)
- 1/2 cup Sugar (Adjust to taste)
- 1 teaspoon Vanilla extract
- 1/4 teaspoon Salt (A pinch to enhance flavors)
Garnishes
- 1 cup Fresh fruit (Mango or berries recommended)
- 1/4 cup Caramel sauce (Drizzle for added sweetness)
- 1/4 cup Toasted coconut flakes (For garnish)
Instructions
- Prepare the thickening mixture: In a small bowl, dissolve the cornstarch in a few tablespoons of the coconut milk to create a smooth slurry. This ensures no lumps form when cooking.
- Heat the coconut milk: Pour the remaining coconut milk into a medium saucepan over medium heat. Add sugar, salt, and vanilla extract. Stir occasionally until the sugar dissolves and the mixture warms evenly.
- Combine and thicken: Slowly whisk in the cornstarch slurry into the warm coconut milk mixture. Continue stirring constantly to prevent lumps and promote even thickening.
- Cook until pudding forms: Keep stirring for about 10-15 minutes or until the mixture thickens to a creamy pudding consistency that coats the back of a spoon. Remove from heat.
- Pour and chill: Transfer the pudding into serving cups or bowls. Allow to cool slightly, then refrigerate for at least 2 hours to set and chill thoroughly.
- Prepare toppings: Toast the coconut flakes in a dry pan over medium heat until golden brown and fragrant. Slice fresh mango or prepare your choice of berries for topping.
- Assemble and serve: Once the pudding is chilled and set, drizzle caramel sauce on top, add fresh fruit, and sprinkle with toasted coconut flakes for added flavor and texture before serving.
Notes
- For a vegan option, ensure the caramel sauce is dairy-free or omit it altogether.
- Adjust sugar amount to suit your taste or substitute with a natural sweetener like agave nectar.
- Use full-fat coconut milk for a creamier texture, but light coconut milk can be used for a lower fat alternative.
- Alternative fruits like pineapple or papaya also complement this dessert nicely.
- Prepare the pudding in advance to allow sufficient chilling time for best results.
