Description

These No Sugar Cottage Cheese Carrot Cake Bars are a wholesome and delicious treat perfect for a healthy snack or dessert. Made with ripe bananas, cottage cheese, and finely grated carrots, they offer natural sweetness without any added sugar. The use of oat flour and warm spices like cinnamon and nutmeg creates a moist, flavorful bar that’s both nutritious and satisfying.

Ingredients

Scale

Wet Ingredients

  • 2 large ripe bananas
  • 2 eggs
  • 1 cup cottage cheese
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup finely grated carrots
  • 1 ½ cups oat flour
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper to ensure easy removal and clean-up.
  2. Mash Bananas: In a large bowl, mash the bananas thoroughly until smooth, providing natural sweetness and moisture for the bars.
  3. Combine Wet Ingredients: Add the eggs, cottage cheese, and vanilla extract to the mashed bananas. Whisk together until the mixture is fully combined and smooth.
  4. Add Dry Ingredients and Mix: Stir in the grated carrots, oat flour, cinnamon, nutmeg, baking powder, baking soda, and salt. Mix well until a thick batter forms, ensuring all ingredients are evenly distributed.
  5. Spread Batter in Pan: Transfer the batter into the prepared baking pan, spreading it out evenly to promote uniform baking.
  6. Bake: Place the pan in the preheated oven and bake for 25–28 minutes, or until a toothpick inserted in the center comes out clean, indicating the bars are cooked through.
  7. Cool and Slice: Remove the pan from the oven and allow the bars to cool completely in the pan before slicing into 9 square bars to enjoy.

Notes

  • Ensure bananas are very ripe for the best natural sweetness.
  • For a gluten-free version, verify that the oat flour is certified gluten-free.
  • Store bars in an airtight container in the refrigerator for up to 5 days.
  • These bars can also be frozen for up to 3 months; thaw before serving.
  • Feel free to add chopped nuts or raisins for added texture and flavor.
