Description

These No Sugar Cottage Cheese Carrot Cake Bars are a healthy and delicious treat that combines the natural sweetness of bananas and carrots with the creamy texture of cottage cheese. Perfect for a wholesome snack or breakfast, these bars are baked to perfection with oat flour and warm spices, making them gluten-free and naturally sweetened without any added sugar.

Ingredients

Scale

Main Ingredients

  • 2 large ripe bananas
  • 2 eggs
  • 1 cup cottage cheese
  • 1 teaspoon vanilla extract
  • 1 cup finely grated carrots

Dry Ingredients

  • 1 ½ cups oat flour
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper to prevent sticking and ensure easy removal of the bars.
  2. Mash bananas: In a large bowl, mash the ripe bananas thoroughly until smooth and free of lumps, which will add natural sweetness and moisture to the bars.
  3. Combine wet ingredients: Add the eggs, cottage cheese, and vanilla extract to the mashed bananas. Whisk everything together until the mixture is fully combined and smooth.
  4. Add dry ingredients and carrots: Stir in the finely grated carrots, oat flour, cinnamon, nutmeg, baking powder, baking soda, and salt. Mix until a thick and even batter forms, ensuring all ingredients are well incorporated.
  5. Spread batter: Pour and evenly spread the batter into the prepared baking pan, smoothing the top with a spatula for uniform thickness.
  6. Bake the bars: Place the pan in the preheated oven and bake for 25–28 minutes. Check doneness by inserting a toothpick into the center; it should come out clean.
  7. Cool and slice: Remove the pan from the oven and allow the bars to cool completely in the pan. Once cooled, cut into 9 equal square bars for serving.

Notes

  • Use ripe bananas for the best natural sweetness.
  • You can substitute oat flour with almond flour for a different texture and flavor.
  • Ensure the cottage cheese is well mixed to avoid lumps in the batter.
  • Store the carrot cake bars in an airtight container in the refrigerator for up to 5 days.
  • These bars freeze well; wrap individually for easy grab-and-go snacks.
