Description

Enjoy the delightful combination of creamy pistachio pudding and classic sugar cookie flavors in these easy Pistachio Pudding Sugar Cookie Bars. With a soft, chewy texture and a subtle nutty twist, these bars are perfect for a quick dessert or snack that will impress family and friends.

Ingredients

Scale

Ingredients

  • 1/2 cup butter, softened
  • 2 large eggs
  • 3.4 oz pistachio instant pudding mix
  • 1 package sugar cookie mix (approximately 15.3 oz)

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) to ensure it reaches the perfect temperature by the time your dough is ready.
  2. Mix Wet Ingredients: In a large mixing bowl, combine the softened butter, eggs, and pistachio instant pudding mix. Use an electric mixer to blend them together until the mixture is smooth and uniform.
  3. Add Cookie Mix: Gradually add the sugar cookie mix to the bowl. Continue mixing with the electric mixer until the dough becomes sticky and well combined.
  4. Prepare Baking Sheet: Grease a 10 x 15-inch baking sheet to prevent sticking. Then evenly spread the sticky dough across the surface, smoothing the top as best as possible.
  5. Bake: Place the baking sheet in the preheated oven and bake for 10–12 minutes. Watch for golden edges and a lightly browned top to indicate the bars are done.
  6. Cool and Serve: Remove the baking sheet from the oven and allow the cookie bars to cool completely. Once cooled, slice into bars and serve.

Notes

  • Make sure the butter is properly softened for easier mixing.
  • You can substitute any flavor of instant pudding mix for different variations.
  • Do not overbake; bars should be slightly soft in the center when removed from the oven.
  • Store bars in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
