Instructions
- Prep the pan and cereal: Line a 9×9 inch square pan with parchment paper to prevent sticking. In a large mixing bowl, combine the brown rice cereal and chopped pistachios, then set aside.
- Make the syrup mixture: In a saucepan or pot over low heat, add the honey, tahini, pistachio butter, vanilla, and kosher salt. Warm gently until the mixture is heated through and begins to bubble softly, stirring occasionally to combine the ingredients evenly.
- Mix, pack, and freeze: Pour the warm syrup mixture over the cereal and pistachios. Fold together carefully using a rubber spatula until all ingredients are evenly coated. Transfer the mixture into the prepared pan and spread evenly. Sprinkle extra chopped pistachios on top for garnish. Using a measuring cup or glass, press down firmly to compress the mixture into an even, compact layer. Cover with plastic wrap and place in the freezer for 1 hour to set.
- Cut and store: Once set, remove treats from the pan by lifting the parchment paper. Cut into 12 squares using a sharp knife. Store these treats in a glass container in the refrigerator or freezer for up to 1 week for optimal freshness.
