Ingredients
Scale
Custard Mixture
- 4 large eggs
- 1 cup milk
- 1/2 cup pumpkin puree
- 1 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground cloves
- 1 teaspoon vanilla extract
Bread
- 8 slices of thick bread (like brioche or challah)
For Frying and Serving
- Butter for frying
- Maple syrup for serving
- Powdered sugar for serving
Instructions
- Prepare the custard mixture: In a large bowl, whisk together the eggs, milk, pumpkin puree, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and cloves until everything is well combined and smooth.
- Heat the skillet: Place a large skillet over medium heat and add a tablespoon of butter, allowing it to melt completely and coat the pan.
- Soak the bread: Dip each slice of the thick bread into the pumpkin custard mixture, letting it soak for a few seconds on each side so that it absorbs the flavors without becoming too soggy.
- Fry the bread slices: Place the soaked bread slices onto the skillet and cook until the underside is golden brown, about 2-3 minutes. Flip and cook the other side similarly until golden and cooked through.
- Serve: Serve the pumpkin French toast warm, drizzled generously with maple syrup and dusted with powdered sugar for an extra touch of sweetness.
Notes
- Use thick slices of bread like brioche or challah to prevent soaking through too quickly.
- Adjust the spices to your preference to make it more or less spicy.
- To keep cooked French toast warm, place slices on a baking sheet in a 200°F (93°C) oven while finishing the rest.
- You can substitute regular milk with any plant-based milk for a dairy-free version.
- Leftovers can be refrigerated and reheated in a toaster or skillet.
