Ingredients
Scale
Beans and Rice
- 1 cup dried black beans (soaked overnight) or 2 cans (15 oz each) black beans, drained and rinsed
- 1 cup long-grain white rice or brown rice
- 2 1/2 cups chicken or vegetable broth
- 1 tablespoon apple cider vinegar or lemon juice (optional for brightness)
Meat and Vegetables
- 12 oz smoked sausage, andouille sausage, or turkey sausage, sliced into bite-sized pieces
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup chopped bell pepper (any color)
Spices
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper (adjust to taste)
Other
- 1 tablespoon vegetable oil or olive oil
Instructions
- Prepare the Ingredients: If using dried beans, soak them overnight, then drain before cooking. Rinse canned beans under cold water. Chop the onion, garlic, bell pepper, and sausage into bite-sized pieces to have everything ready for cooking.
- Sauté the Vegetables: Heat 1 tablespoon of oil in a large pot over medium heat. Add the chopped onion and bell pepper and cook for about 5 minutes until they soften. Then add the minced garlic and cook for an additional minute until fragrant.
- Add the Sausage: Add the sliced sausage to the pot and cook for 5 to 7 minutes, stirring occasionally, until the sausage is browned and releases its smoky flavor into the vegetables.
- Incorporate Spices: Sprinkle the cumin, paprika, and cayenne pepper over the sausage and vegetables. Stir well to ensure all ingredients are evenly coated with the spices, enhancing the dish’s depth of flavor.
- Add Beans and Broth: Stir in the black beans and pour in the chicken or vegetable broth. Bring the mixture to a boil, then reduce the heat to a low simmer to combine flavors.
- Cook the Rice: Add the rice to the pot and cover with a lid. Let it simmer gently for about 20 minutes (follow specific rice package instructions if needed) until the rice is fully cooked and has absorbed the liquid.
- Fluff and Serve: Remove the pot from heat and keep it covered for an additional 5 minutes to let the flavors meld. Fluff the rice gently with a fork, add apple cider vinegar or lemon juice if desired, and serve warm.
Notes
- For dried beans, always soak overnight to reduce cooking time and improve texture.
- Use turkey sausage for a leaner, lower-fat alternative.
- Add apple cider vinegar or lemon juice at the end to brighten the dish and balance the richness.
- Adjust cayenne pepper quantity to control heat level.
- Leftovers keep well refrigerated for up to 3 days and can be reheated on stovetop or microwave.
