Ingredients
Scale
Chicken and Marinade
- 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 2 tbsp soy sauce
- 1 tbsp cornstarch
Cooking
- 1 tbsp vegetable oil
- 4 scallions, cut into 2-inch pieces
- 3 cloves garlic, minced
- 1 tbsp ginger, minced
Sauce
- 2 tbsp oyster sauce
- 1 tbsp soy sauce (extra for the sauce)
- 1 tsp sesame oil
- 1/4 tsp black pepper
- 1/4 cup chicken broth or water
Instructions
- Marinate the Chicken: In a mixing bowl, combine the bite-sized chicken pieces with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Stir well to coat the chicken evenly. Let it marinate for 10 to 15 minutes to tenderize and absorb the flavors.
- Heat the Pan: Place a skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil. Allow the oil to heat until shimmering, preparing it for stir-frying.
- Cook the Chicken: Add the marinated chicken pieces to the hot skillet. Stir-fry continuously for 5 to 6 minutes until the chicken is browned on the outside and cooked through on the inside. Once cooked, remove the chicken from the skillet and set aside.
- Cook the Aromatics: In the same skillet, add the cut scallions, minced garlic, and minced ginger. Stir-fry these aromatics for 1 to 2 minutes until they become fragrant and slightly softened, releasing their flavors.
- Prepare the Sauce: In a small bowl, mix together 2 tablespoons of oyster sauce, 1 tablespoon of soy sauce, 1 teaspoon of sesame oil, 1/4 teaspoon of black pepper, and 1/4 cup of chicken broth or water. Stir to combine all the sauce ingredients thoroughly.
- Combine and Finish: Return the cooked chicken to the skillet with the aromatics. Pour the prepared sauce over the chicken and scallions. Stir-fry everything together for 2 to 3 minutes, ensuring the chicken is fully coated and heated through in the flavorful sauce.
- Serve: Transfer the scallion chicken to a serving dish and serve immediately, ideally over steamed rice or noodles for a complete meal.
Notes
- Use chicken thighs for juicier results; chicken breasts work if preferred leaner.
- Adjust the soy sauce quantity to taste to control saltiness.
- For a spicier dish, add some sliced chili peppers or a dash of chili flakes during stir-frying.
- If chicken broth is unavailable, water can be used as a substitute, though broth adds extra flavor.
- Serve with steamed rice or your choice of noodles for a satisfying meal.
- This dish is best enjoyed fresh but can be refrigerated for up to 2 days.
