Description

These Shrimp Taco Bites are a delicious and bite-sized appetizer perfect for parties or casual gatherings. Juicy marinated shrimp are quickly sautéed and placed on scoop-style tortilla chips topped with creamy sour cream, fresh avocado, and zesty salsa. Garnished with cilantro and lime, they offer a refreshing combination of flavors with a satisfying crunch.

Ingredients

Scale

Shrimp Marinade

  • 24 large raw shrimp (peeled, deveined, and tails-off)
  • 1/4 cup olive oil
  • 3 tablespoons honey
  • Juice of 2 small limes
  • Zest of 1 lime
  • 3 cloves garlic (minced)
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Assembly

  • 24 scoop-style tortilla chips
  • 1 container (16 ounces) sour cream
  • 1 large ripe avocado (diced or mashed)
  • 1 cup salsa or Pico de Gallo
  • Fresh cilantro for garnish (optional)
  • Lime wedges for serving (optional)

Instructions

  1. Prepare Shrimp Marinade: In a large bowl, whisk together olive oil, honey, lime juice, lime zest, minced garlic, chili powder, red pepper flakes, kosher salt, and black pepper to create the marinade.
  2. Marinate Shrimp: Add the peeled, deveined shrimp to the marinade and toss well to coat. Cover and refrigerate for 1 hour to allow the flavors to infuse into the shrimp.
  3. Cook Shrimp: Heat a nonstick skillet over medium-high heat. Add the shrimp along with half of the marinade to the pan. Discard the remaining marinade. Cook the shrimp for 2 to 3 minutes on each side until they turn pink, curl up, and are cooked through but not overcooked. Remove from heat and let rest briefly.
  4. Assemble Taco Bites: On each scoop-style tortilla chip, place approximately 1 teaspoon of sour cream followed by 1 teaspoon of diced or mashed avocado. Top with one cooked shrimp.
  5. Add Salsa and Garnish: Spoon a small amount of salsa or Pico de Gallo over each shrimp. Garnish with fresh cilantro leaves and a squeeze of lime if desired.
  6. Serve: Serve the shrimp taco bites immediately while the tortilla chips remain crunchy and the shrimp warm for best taste and texture.

Notes

  • Do not overcook the shrimp as they can become rubbery; cook until just pink and curled.
  • Marinating for a full hour maximizes flavor absorption but can be shortened to 30 minutes if needed.
  • Use scoop-style tortilla chips for easy assembling and serving.
  • Fresh lime wedges add a bright finish when squeezed on top before eating.
  • To make it spicier, increase the amount of red pepper flakes or add a dash of hot sauce to the salsa.
