Instructions
- Prepare Shrimp Marinade: In a large bowl, whisk together olive oil, honey, lime juice, lime zest, minced garlic, chili powder, red pepper flakes, kosher salt, and black pepper to create the marinade.
- Marinate Shrimp: Add the peeled, deveined shrimp to the marinade and toss well to coat. Cover and refrigerate for 1 hour to allow the flavors to infuse into the shrimp.
- Cook Shrimp: Heat a nonstick skillet over medium-high heat. Add the shrimp along with half of the marinade to the pan. Discard the remaining marinade. - Assemble Taco Bites: On each scoop-style tortilla chip, place approximately 1 teaspoon of sour cream followed by 1 teaspoon of diced or mashed avocado. Top with one cooked shrimp.
- Add Salsa and Garnish: Spoon a small amount of salsa or Pico de Gallo over each shrimp. Garnish with fresh cilantro leaves and a squeeze of lime if desired.
