Instructions
- Prepare the Slow Cooker: Spray a 4 to 6-quart slow cooker with nonstick cooking spray to prevent sticking. Add the brown gravy mix, au jus mix, and water to the slow cooker and whisk together until combined. Add the beef stew meat and stir to ensure all meat pieces are covered with the gravy mixture as much as possible. Cover the slow cooker with the lid.
- Slow Cook the Beef: Cook the beef on low heat for 6 to 8 hours or on high heat for about 5 hours until the beef is tender. This slow cooking allows the meat to become soft and absorb all the savory flavors from the gravy and au jus mixes.
- Incorporate Sour Cream: About 30 minutes before serving, ladle approximately 1/2 cup of the gravy from the slow cooker into a small bowl. Stir in the 1/2 cup of sour cream until smooth. Return this sour cream mixture back into the slow cooker and stir well to combine. Cover and continue to cook on high for another 20 minutes, allowing the flavors to blend and the sauce to thicken slightly.
- Cook the Egg Noodles: While the sour cream mixture is finishing in the slow cooker, prepare the egg noodles according to package instructions until al dente. Drain the noodles thoroughly.
- Serve: Serve the tender beef and creamy gravy mixture hot over the cooked egg noodles. Optionally, for easier serving, you may add the noodles directly to the slow cooker and stir gently to combine before plating.
