Description

A delightful Snickerdoodle Cobbler featuring a buttery cinnamon sugar cake base topped with a sweet brown sugar syrup, baked to golden perfection. This warm dessert combines the nostalgic flavors of snickerdoodle cookies with the comforting texture of a cobbler, perfect for cozy gatherings or simple indulgence.

Ingredients

Scale

Wet Ingredients

  • 1/3 cup unsalted butter, melted
  • 3/4 cup whole milk
  • 2 teaspoons vanilla extract
  • 1 1/2 cups hot water

Dry Ingredients

  • 1 1/2 cups sugar
  • 1 1/2 cups flour
  • 2 1/4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 1/2 cups brown sugar, packed
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat & Prepare Pan: Preheat your oven to 350°F (175°C). Take a 9×13-inch baking pan and pour the melted butter into it, spreading it evenly across the bottom to create a rich buttery base.
  2. Mix Wet Ingredients: In a large mixing bowl, whisk together the whole milk, vanilla extract, and 1 1/2 cups of sugar until the mixture is smooth and well combined.
  3. Add Dry Ingredients: Add the flour, baking powder, salt, and cinnamon to the milk mixture. Stir gently until just combined to avoid overmixing, which can toughen the cobbler.
  4. Layer Batter: Spoon the batter evenly over the melted butter in the baking pan. Do not stir; allow it to settle naturally over the butter layer.
  5. Add Brown Sugar: Sprinkle the packed brown sugar evenly over the batter layer to introduce a sweet, caramelized flavor.
  6. Pour Hot Water: Carefully and gently pour the hot water over the top of the brown sugar and batter layers. Do not stir; the cobbler will bake with a layered effect as the water interacts with the sugars and batter.
  7. Bake: Place the baking pan in the oven and bake for 30 to 35 minutes, or until the top is golden brown and mostly set. A toothpick inserted in the center should come out mostly clean with a few moist crumbs.
  8. Finish with Topping: In a small bowl, mix together the 1/4 cup sugar and 1/2 teaspoon cinnamon. Sprinkle this mixture evenly over the hot cobbler as soon as it comes out of the oven to add a final burst of cinnamon sweetness.
  9. Cool & Serve: Allow the cobbler to cool slightly for about 10 minutes before serving warm. This enhances the flavors and makes it easier to scoop.

Notes

  • Use whole milk for a richer flavor; however, 2% milk can be substituted.
  • Ensure the water is hot but not boiling when poured over the batter to help dissolve sugars properly.
  • Serve with vanilla ice cream or whipped cream for an extra indulgent treat.
  • Store leftovers covered in the refrigerator for up to 3 days. Reheat gently before serving.
  • Do not stir batter after pouring to maintain the cobbler’s layered texture.
