Description

A delightful twist on classic Rice Krispies treats, these Sugar Cookie Rice Krispies combine a buttery sugar cookie mix with gooey marshmallows and festive sprinkles for a sweet, chewy, and crunchy treat that’s perfect for holiday gatherings or any time you crave a nostalgic snack.

Ingredients

Scale

Base Mixture

  • ½ cup butter
  • ½ cup sugar cookie mix (dry mix from the pouch)
  • 1 bag marshmallows (10 ounces, about 40 large marshmallows)
  • 6 cups Rice Krispies cereal

Additional Mix-ins & Decoration

  • 1/3 cup mini marshmallows
  • 2 tbsp sprinkles (Christmas or other color)
  • Additional sprinkles for decorating

Instructions

  1. Prepare the Pan: Grease a 9″x13″ baking tray with cooking spray or line it with parchment paper to prevent sticking.
  2. Melt Butter: Place a large pot on low heat and gently melt the ½ cup butter, ensuring it does not brown or burn.
  3. Add Sugar Cookie Mix: Stir in the ½ cup sugar cookie mix into the melted butter. Continue stirring and cook for 1 minute to combine flavors.
  4. Melt Marshmallows: Add the entire 10-ounce bag of marshmallows to the pot. Stir continuously until the marshmallows are fully melted and the mixture is smooth and evenly combined with the butter and cookie mixture.
  5. Mix in Cereal: Remove the pot from heat. Add the 6 cups of Rice Krispies cereal gradually, gently folding with a spatula or wooden spoon to coat the cereal without crushing it. Spray the spatula with cooking spray beforehand to prevent sticking.
  6. Add Mini Marshmallows & Sprinkles: Stir in 1/3 cup mini marshmallows and 2 tablespoons of sprinkles. Some mini marshmallows will melt slightly, while others will remain whole, adding a fun texture.
  7. Press Into Pan: Transfer the mixture to the prepared baking pan. Spread it out evenly, pressing down lightly—not too hard—to create a uniform layer without compacting too much.
  8. Decorate: Sprinkle additional sprinkles on top for a festive appearance.
  9. Cool and Serve: Let the treats cool at room temperature for about 30 minutes until firm. Cut into 18 to 24 square pieces and enjoy!

Notes

  • Spraying the spatula with cooking spray before mixing helps prevent the sticky mixture from clinging to the utensil.
  • Do not press the Rice Krispies mixture too firmly into the pan to keep the treats light and crunchy.
  • You can customize the sprinkles for different occasions—use red and green for Christmas, pastel for Easter, or your favorite colors year-round.
  • Store leftovers in an airtight container at room temperature for up to 3 days to maintain freshness.
